All our flour and semola is produced exclusively with hard and soft grains cultivated in the Region of Sicily, Organically and conventionally grown, milled using Ferte natural stones as well as modern cylinder mills. 

MOLINI DEL PONTE IS A PRODUCER OF DURUM WHEAT FLOUR FOR PANE NERO DI CASTELVETRANO 

The miller, Filippo Drago, produces whole grain flour using ancient Sicilian grains.

Of these grains, the most well known is Tumminia, used for Busiate Pasta as well as the brown bread of Castelvetrano

THE PASTA

Our pasta is produced with our whole grain semola, made using ancient grains and Sicilian hard grains.

The artisan pasta is bronze extruded and dried from three to five days at temperature less than 38 degrees
